Walnut Oatmeal Chocolate Chip Cookies - Gluten Free

I am very impressed with the flavor of these cookies!  The best part is you don't feel bad eating the batter.  I think it would make great little uncooked balls to serve for a party.  Maybe roll the balls in cocoa powder, unsweetened coconut flakes, or fine chopped almonds.  If you want to experiment with using different nuts, that should work well too.


Healthy Chocolate Chip Cookies

3 cups rolled oats
1/4 cup wheat germ
1/2 tsp salt
1 tsp baking soda
1/2 cup firmly packed dark brown sugar
2 flax eggs (2 Tbsp flax meal mixed with 6 Tbsp water, let sit before adding)
1 tsp vanilla (optional)
2 1/2 cups walnuts
1 cup chocolate chips (optional)

Preheat oven to 350.  In a food processor or blender, blend oats to a fine powder.  This is key: the oats must be well blended.  Add them to a medium bowl and mix in wheat germ, flax, salt, soda, and brown sugar.  Add flax eggs and vanilla, mix well.

Blend walnuts in the same food processor until they are fine, but not butter.  Add walnuts to mixture and blend well.  Add chocolate chips.  The dough should get sticky, if it is still too dry, add a Tbsp of water.  Test the dough again and if it needs more, add 1 tsp a time after until it sticks well together.

Bake on a cookie sheet lines with parchment paper for about 11 minutes, until the tops just have a tinge of brown.
